Back in March we were at the Four Seasons Resort Hualalai for Made in America 2 and then LudoBites Hawaii Nine-0 with Chef Ludo Lefebvre and his wife Krissy. Oh the memories!
During his stay on the Big Island Quicksilver (who provided all the uniforms for LudoBites Hawaii Nine-O) arranged for Lefebvre to meet up with three professional surfers Mark Healey, Reef McIntosh and Steph Gilmore to explore the local seafood. Using a speargun and free diving Healey caught a beautiful Omilu (a bluefin tavally) which they cooked up on the beach. Other ingredients they caught and brought back to Lefebvre’s pop-up kitchen included opihi, spiny lobster, Kona crab and Uku.
