Grilled Cheese Sandwich with Mango Chutney – fit for the Queen

Oh simple pleasures!

To me there is almost nothing more satisfying than a grilled cheese sandwich – a cheese toasty. However, like most things that are very simple it’s all in the details to make it absolutely perfect.

I sometimes make this with sliced tomatoes or guacamole – today I chose mango chutney. And not just any mango chutney but the one that’s eaten by the Queen of England!

What you’ll need:

2 slices soughdough bread – I use Pioneer
2 -3 oz cheddar cheese, thinly sliced – I use Kerrygold Dubliner
1 tablespoon mango chutney – I like Sharwood’s Major Grey

What to do:

1. Lightly toast the bread on one side.
2. On one slice of the bread on the un-toasted side lay the strips of cheese and broil until bubbling.
3. On the other slice of bread on the un-toasted side spread the mango chutney.
4. Sandwich the two sides together.

Enjoy!

Grilled cheese and chutney – may need to add a slice of ham and then I will allow myself to be “queen for a day”. Maybe if I wear a crown I can get out of doing the dishes!xx
